1 lb ground pork
salt and pepper – to taste
sausagey seasonings: cayenne, nutmeg, sage, thyme, fennel, paprika, parsley, crushed red pepper – add or omit as you see fit
garlic – maybe like 6 cloves? How much garlic do you like?
1 onion
1 celery stalk
tapioca powder (or arrowroot/corn starch/flour)
potatoes (I used 4 medium red potatoes)
kale
1 carton chicken broth
1 can coconut milk

You guys, I don’t measure ingredients. I just add until it looks right. My general rule is to add a bit more than what looks like too much. More flavor is always good.
Start by mixing ground pork, a few crushed cloves of garlic, salt and pepper, herbs and spices. Alternatively, you could use your favorite prepared sausage. I couldn’t find any Whole30 approved sausage at my local grocery store so I made my own.
In a stock pot, saute onion, celery, and a few cloves of chopped garlic in oil/ghee until translucent. Add the sausage and brown.
Add a couple of spoons of your thickening agent to the meat/onion/garlic and mix until bubbly. Slowly add chicken broth, making sure to stir well so it’s smooth, not lumpy. I added a few cups of water too, but you can go either way on that.
Add cubed potatoes and a few good handfuls of kale. Simmer until potatoes are soft.
Stir in a can of coconut milk and let the flavors marry for a few minutes. Taste, add extra seasonings if necessary.
